Baked Garbanzo Beans, or chickpeas, make a great fiber-packed snack as-is or can be used as a salad to topping. You can also add seasoning to your baked garbanzos to add to pasta dishes for an earthy flavor and crunchy texture.
Makes 4 cups
2x 15oz. cans Garbanzo Beans
2T Curry Powder
1T Olive Oil
1T Ground Cumin
1t Ground Ginger
1t Sea Salt
Open can of garbanzo beans. Drain, rinse, and dry completely.
Preheat oven to 400.
Line a cookie sheet with parchment paper.
Place all ingredients in a large mixing bowl and mix well to evenly coat garbanzos.
Spread out your seasoned beans onto lined cookie sheet in a single layer.
Bake for about 20 minutes then remove cookie sheet from the oven.
Stir beans, spread them out again into a single layer, and bake for an additional 25 more minutes, until golden brown and crunchy.
Cool your beans to room temperature.
They are ready to eat as-is.
Store Garbanzo in an airtight container at room temperature.
Season your garbanzos beans with other spices for use in other recipes or to eat as a snack.
